Ingredients
- 2 pounds fresh asparagus tough ends removed
- 1 bulb bulb fresh garlic roughly chopped
- 1 cup fresh Parmesan cheese grated
- 1/2 cup pine nuts or sunflower seeds
- 1 large lemon juiced
- 1/2 cup avocado oil
- sea salt & ground pepper to taste

Instructions
- Preheat oven to 425 degrees
- Clean asparagus and remove the thick, tough ends
- Arrange asparagus on cookie sheet in a single layer
- Top with chopped garlic
- Drizzle oil over asparagus making sure it’s all evenly coated
- Squeeze lemon over asparagus
- Toss to make sure all of the asparagus is seasoned and has a nice coating of oil
- Bake for 10 minutes at 425 degrees
- Sprinkle asparagus with pine nuts & Parmesan cheese
- Return to the oven and bake for another 5 minutes or until cheese is melted and lightly toasted on the edges
- Serve warm & enjoy
